For the Halwa

  • 1 cup Gram Flour also known as besan
  • 1/2 cup Water
  • 1/4 cup Milk adds richness and creaminess
  • 2 tbsp Clarified Butter clarified butter; use desi ghee for authentic flavor
  • 1/2 cup Sugar adjust to your sweetness preference

For Garnishing

  • 1 tbsp Nuts almonds, cashews, chopped, or a mix, pistachios
  • 1 tbsp Raisins

Instructions
 

Preparing the Halwa

  • Heat the ghee in a heavy-bottomed pan or kadai over medium heat. Add the gram flour and stir constantly to prevent burning.

Roasting the Flour

  • Continue stirring until the gram flour turns a deep golden brown and a fragrant aroma is released. This step is crucial for developing the halwa's characteristic flavor and texture. It will take approximately 10-15 minutes. Be patient and stir consistently.

Adding Liquids

  • Gradually add the water and milk, stirring continuously to avoid lumps. The mixture will thicken.

Sweetening and Finishing

  • Add the sugar and continue stirring until the mixture thickens further and starts to leave the sides of the pan. The halwa will pull away from the sides of the pan and become slightly glossy.

Serving

  • Remove from heat and pour into a serving dish. Garnish with chopped nuts and raisins. Serve warm or at room temperature.
