Ingredients
Vegetable Peels
- 1/2 cup Vegetable Peels and/or potato, bottle gourd, from pumpkin, mixed, pointed gourd, raw banana, ridge gourd, thoroughly washed
Aromatic Paste
- 1/4 cup Coconut fresh, grated
- 1 tsp Ginger Paste
- 1-2 Chilies finely chopped, green
Other Ingredients
- 1 tbsp Mustard Oil
- 1/2 tsp Salt or to taste, pink
- Turmeric Leaves for wrapping
Instructions
- First, gently boil the mixed vegetable peels until softened. This helps create a smoother paste.
- In a food processor or blender, combine the softened vegetable peels, grated fresh coconut, ginger paste, chopped green chilies, and pink salt. Blend until a smooth paste forms.
- Mix the vegetable peel paste with mustard oil. This adds a distinct flavor and helps bind the mixture.
- Take a turmeric leaf and place a spoonful of the vegetable peel mixture in the center. Fold the leaf carefully to create a parcel, ensuring the filling is securely enclosed.
- Heat a tawa or griddle over medium heat. Place the turmeric leaf parcels on the hot tawa and bake for about 10-15 minutes per side, or until the leaves are fragrant and slightly charred. Turning ensures even cooking.
- Serve the Vegetable Peel Paturi hot with steamed rice. The turmeric leaves impart a subtle earthy flavor that complements the savory filling.
Recipe Notes
Good To Know
- If turmeric leaves are unavailable, you can substitute with banana leaves for wrapping—the flavor will vary slightly but still provide an aromatic, protective layer for steaming or baking.
- For a subtle smoky flavor, briefly char the turmeric or banana leaves over an open flame before wrapping; this also makes the leaves more pliable and less likely to tear.
- For added crunch and flavor, sprinkle a few toasted poppy seeds or a dash of black mustard seeds into the mixture before wrapping.
Expert Tips
- Ensure the ingredients are finely chopped for even cooking within the leaf wrap.
- Adjust the steaming time based on the thickness of the wrapped parcels and the type of ingredients used.
- Serve the paturi with a side of steamed rice and a dollop of plain yogurt or chutney for a complete meal.
Storage Instructions
- Leftover paturi can be refrigerated and gently reheated by steaming or microwaving with a damp cloth to retain moisture and prevent drying out.
