Ingredients
Papaya Mixture
- 1 cup Papaya grated
- ½ cup Poppy Seed Paste
- ½ cup Mustard Paste
- ½ cup Coconut Paste
- 2 tsp Chili Paste green
- 1 ½ tsp Salt or to taste
- 2 tbsp Mustard Oil
For Wrapping and Cooking
- 4 Bottle Gourd Leaves fresh, large
- 2 tbsp Mustard Oil for pan-frying
Instructions
- In a mixing bowl, combine the grated papaya, poppy seed paste, mustard paste, coconut paste, green chili paste, salt, and mustard oil.
- Mix the ingredients thoroughly to ensure the papaya is evenly coated with the flavorful paste.
- Lay out a bottle gourd leaf and place 2 tablespoons of the papaya mixture in the center.
- Carefully fold the leaf over the filling, creating a small parcel. This will help to steam the papaya and infuse it with the aroma of the bottle gourd leaf.
- Repeat the wrapping process with the remaining papaya mixture and bottle gourd leaves.
- Heat mustard oil in a frying pan over medium heat.
- Place the wrapped papaya parcels in the hot pan and shallow fry them until they are lightly golden brown on both sides. This gentle frying helps to seal in the flavors and enhance the textures.
- Serve the warm Papaya Paturi with steamed rice for a complete and satisfying Bangladeshi meal.
Recipe Notes
Good To Know
- Papaya leaves are also edible.
- For a smokier flavor, wrap the papaya mixture in banana leaves before steaming or grilling.
- If you prefer a milder heat, remove the seeds from the green chilies before making the paste, or substitute with sweet green peppers.
- For a vegan version, ensure the couscous and coconut pastes are dairy-free and use unrefined coconut oil.
Expert Tips
- Ripe but firm papaya is ideal for this recipe, as it holds its shape well during cooking.
- Adjust the amount of green chilies to your preferred level of spiciness. Start with a small amount and add more to taste.
- Freshly grated coconut enhances the flavor of the dish compared to pre-shredded coconut.
Storage Instructions
- Leftover Papaya Paturi can be cooled and reheated gently in a steamer or microwave.
- Alternatively, mash and spread it over toasted flatbread for a flavorful snack or appetizer the next day.
