Ingredients
Capsicums & Paneer Preparation
- 4 Capsicums bell peppers, halved lengthwise and seeded, medium-sized
- 250 gm Cottage Cheese indian cottage cheese
- 1.5 tbsp Lemon Juice
- 1 tsp Salt or to taste
- 1/2 tsp Chili Powder red
Spice Paste & Filling
- 2 tbsp Vegetable Oil for stir-frying and shallow frying
- 1 tsp Cumin Seeds jeera
- 2 tsp Coriander Powder dhania
- 1 tsp Ginger Paste
- 1 tsp Chili Paste hari mirch, green
- 2 tbsp Couscous Paste
- 1 tsp Garam Masala all ground
Garnish
- Coriander chopped, for garnish
Instructions
Prepare the Paneer
- Marinate 250g paneer cubes with 1.5 tbsp lemon juice, 1 tsp salt, and 1/2 tsp red chili powder. Shallow fry until lightly golden and set aside.
Make the Filling
- Heat 2 tbsp oil in a pan. Add 1 tsp cumin seeds, 2 tsp coriander powder, 1 tsp ginger paste, 1 tsp green chili paste, and 2 tbsp couscous paste. Sauté for a minute. Add the fried paneer and 1 tsp garam masala. Cook until heated through and flavors meld.
Assemble and Cook
- Fill each halved capsicum with the paneer mixture. Shallow fry the stuffed capsicums in the remaining oil until tender and slightly browned on both sides. Garnish with fresh coriander leaves before serving.
