Ingredients
For the Mango Layers:
- 1 large Mango ripe, but firm; about 1.5 lbs
For the Mawa Filling:
- 1 cup Mawa (khoya), clarified butter milk solids
- 1/2 cup Sugar granulated; adjust to taste
- 1/2 cup Nuts chopped; such as pistachios, almonds, cashews, mixed
- 1 tsp Cardamom Powder ground; also known as elaichi
- 1/2 cup Water for sugar syrup
Instructions
Prepare the Mango
- Peel and carefully slice the mango into thin, even sheets. Try to keep the slices as large and intact as possible.
Make the Sugar Syrup
- In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Bring to a gentle simmer for about 2-3 minutes until slightly thickened.
Prepare the Mawa Filling
- In a non-stick pan, gently heat the mawa over low heat until it melts and becomes smooth. Add the sugar, cardamom powder, and chopped nuts. Stir well to combine. Cook for another 2-3 minutes, stirring constantly, to ensure the mixture is well blended and heated through.
Assemble the Mango Sweet
- Briefly dip each mango slice into the hot sugar syrup (about 10-15 seconds) to lightly coat them. Remove and arrange them on a plate to cool slightly.
Layer and Finish
- Spread a thin layer of the mawa mixture onto each mango slice. Carefully fold the slice in half or roll it up, depending on preference. Repeat with all the mango slices.
Serve
- Gently arrange the folded or rolled mango sweets on a serving platter. Refrigerate for at least 30 minutes to allow the flavors to meld before serving.
Recipe Notes
Expert Tips for the Perfect Mango Sweet
- For the best results, use very ripe but firm mangoes. This will ensure that the slices hold their shape and do not become mushy.
- Don't overcrowd the pan when cooking the mawa filling. Work in batches if necessary to ensure even heating and prevent burning.
- Adjust the amount of sugar in both the syrup and the filling according to your preference and the sweetness of your mangoes.
- Feel free to experiment with different types of nuts and spices to customize the filling to your liking. A pinch of saffron would add a beautiful color and aroma.
