  • In a large bowl, combine the all-purpose flour, salt, and ghee. Rub the ghee into the flour with your fingertips until the mixture resembles coarse crumbs. This ensures a flaky texture for the gujiya.
  • Gradually add water to the flour mixture, kneading until a firm dough forms. Avoid making the dough too soft. Cover the dough with a damp cloth and let it rest for 30 minutes. This allows the gluten to relax, making the dough easier to roll.
  • To prepare the filling, heat a wok or large pan over medium heat. Crumble the khoya into the pan and cook, stirring constantly, until it lightly browns. This enhances the khoya's nutty flavor.
  • Add the castor sugar and powdered cardamom to the browned khoya. Stir well to combine.
  • Stir in the desiccated coconut and continue cooking for 2-3 minutes. Remove from heat and transfer the filling to a bowl to cool.
  • Once the filling has cooled, gently fold in the chopped dried fruits.
  • Divide the rested dough into small equal portions. Roll each portion into a smooth ball.
  • On a lightly floured surface, roll each dough ball into a thin circle. Place a circle in a gujiya mold or simply fold it in half. Add 1-1.5 tablespoons of the prepared filling to one side of the circle.

  • Moisten the edges of the circle with water and carefully seal the gujiya, crimping the edges decoratively or using a fork to create a pattern. If using a mold, gently press to seal and trim any excess dough.

  • Heat ghee or oil in a deep pan over medium heat. Carefully place the gujiyas in the hot oil and fry until they turn a beautiful golden brown and crispy. Fry in batches to avoid overcrowding the pan.
  • Remove the fried gujiyas and place them on a wire rack or paper towel-lined plate to drain excess oil. Serve warm and enjoy the sweet celebration of Holi!
