Ingredients

- 1 3/4 cup Rice Flour
- 2 tbsp All-Purpose Flour maida
- 2 tbsp Sesame Seeds black
- 1/2 tsp Asafoetida hing
- 1/2 tsp Turmeric Powder
- 1 tsp Chili Powder red
- 1/4 tsp Pepper Powder black
- 1-2 tsp Salt or to taste
Wet Ingredients
- 1/2 - 3/4 cup Fenugreek Leaves methi, finely chopped, fresh
- 2 tbsp Yogurt curd
- 2 tbsp Vegetable Oil
- Water as needed, for adjusting dough consistency
- 1 tbsp Vegetable Oil for brushing
Instructions
Prepare the Dough
- Combine all dry ingredients in a large bowl. Add the chopped fenugreek leaves, yogurt, and 2 tablespoons of oil. Gradually add water, mixing until a soft, pliable dough forms. Do not add too much water; the dough should be slightly stiff.
Shape the Chakali
- Lightly grease a baking sheet. If using a chakali press, fill it with the dough. Press out small, round swirls of dough onto the prepared baking sheet, leaving some space between each. If you don't have a chakali press, roll the dough into a long rope and cut into small pieces. Shape each piece into a small swirl using your fingers.
Bake the Chakali
- Brush the chakalis lightly with oil. Preheat your oven to 350°F (180°C). Bake for 25-30 minutes, or until golden brown, flipping halfway through for even baking.
Cool and Store
- Remove the chakalis from the oven and let them cool completely on a wire rack. Once cooled, store them in an airtight container. They will stay crispy for several days.
