About Baingan Bharta with Roti (Home-Style)
Smoky roasted eggplant mashed and cooked with onions, tomatoes and simple spices - served with soft whole wheat rotis.This home-style version uses minimal oil and no cream, letting the natural smoky flavour of the roasted brinjal do all the work. Ingredients
For the Baingan Bharta
- 1 Brinjal Large, for roasting directly on flame or in oven
- 1 Onion Medium, finely chopped
- 2 Tomato Medium, finely chopped
- 1 Green Chilli Finely chopped, adjust to taste
- 1 teaspoon Ginger Garlic Paste
- 1/4 teaspoon Turmeric Powder
- 1/2 teaspoon Red Chilli Powder Adjust to taste
- 1/2 teaspoon Coriander Powder
- 1/4 teaspoon Garam Masala
- 3/4 teaspoon Salt Or as required
- 1.5 teaspoon Oil
- 1/2 teaspoon Cumin Seeds
- 2 tbsp Coriander Leaves Finely chopped, for garnish
For the Roti
- 1 cup Whole Wheat Flour
- 1/2 cup Water Adjust as needed for soft dough
- 1/4 teaspoon Salt Optional
Instructions
Roasting the Brinjal
- Wash and dry the brinjal. Make 2 to 3 small slits and rub lightly with a few drops of oil. Roast directly over a gas flame on medium heat, turning every 2 minutes, until the skin is charred all over and the brinjal collapses and feels soft inside. This takes about 10 to 12 minutes.
- Place the roasted brinjal in a bowl of cold water for 2 minutes. Peel off the charred skin completely, discard the skin and mash the soft flesh well. Set aside.
Preparing the Roti Dough
- Mix whole wheat flour, salt and water in a bowl. Knead into a soft smooth dough. Cover and rest for 10 minutes while the bharta cooks.
Cooking the Bharta
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add finely chopped onion and green chilli with a pinch of salt. Cook for 4 to 5 minutes until the onion turns golden.
- Add ginger garlic paste and saute for 1 minute. Add chopped tomatoes, turmeric, red chilli powder and coriander powder. Cook on medium heat for 4 to 5 minutes until the tomatoes break down completely and the oil separates.
- Add the mashed brinjal and salt. Mix well and cook on medium heat for 4 to 5 minutes, stirring occasionally, until everything comes together and the bharta looks dry and well combined.
- Add garam masala, stir once and cook for 30 seconds. Garnish with freshly chopped coriander leaves. Remove from heat.
Rolling and Cooking the Rotis
- Divide the dough into equal portions. Roll each portion into a thin round on a lightly floured surface.
- Cook each roti on a hot tawa for about 1 minute per side until light brown spots appear. Finish directly on the flame for a few seconds until it puffs up. Serve immediately alongside the baingan bharta.
