Ingredients
For the Chutney
- 1 cup Banana Blossom chopped bracts
- 1 tbsp Tamarind Paste or 1 tbsp tamarind pulp soaked in 1/4 cup warm water
- 1/2 cup Coconut freshly grated, shredded
- 1/2 cup Coriander chopped, fresh
- 6-8 Chili Pepper adjust to taste, green
- 1 inch Ginger roughly chopped
- 1 tsp Sesame Seeds
- 1.5 tsp Salt or to taste
For Tempering
- 1 tbsp Mustard Oil or coconut oil
- 1/2 tsp Mustard Seeds rai
- 1 tsp Gram Lentils black, split, split and dehusked, urad dal
- 10 leaves Curry Leaves fresh
- 1-2 Chili Pepper adjust to taste, broken into pieces, dried, red
- 1/2 cup Water for grinding
Instructions
Prepare the Banana Blossom
- Add the chopped banana blossom bracts to a saucepan. Add the tamarind paste (or soaked pulp and water). Add enough water to cover the blossom. Cook over medium heat until the bracts are tender, about 15-20 minutes. Let cool completely.
Dry Roast Sesame Seeds
- Dry roast the sesame seeds in a small pan over medium heat until lightly golden and fragrant. Set aside to cool.
Grind the Chutney
- In a blender, combine the cooled banana blossom, shredded coconut, chopped coriander, green chilies, ginger, roasted sesame seeds, salt, and 1/2 cup of water. Blend into a smooth paste, adding more water as needed to reach desired consistency.
Make the Tempering
- Heat the mustard oil in a small pan. Add the mustard seeds and let them splutter. Add the split black gram lentils and curry leaves. Sauté until the lentils turn golden brown.
Combine and Serve
- Add the tempering to the chutney. Stir well to combine. Serve your delicious Udupi-style Banana Blossom Chutney with dosas, idlis, or as a side dish.

Expert Tips for the Best Banana Blossom Chutney
- For a milder chutney, reduce the number of green chilies.
