Ingredients
Vegetables
- 1 medium Beetroot cut into 1/2-inch pieces
Legumes
- 1 cup Chickpeas kala chana, black, dried, soaked overnight
Spices & Aromatics
- 1 tsp Mustard Seeds rai
- 2.5 tbsp Coconut freshly grated, shredded
- 1 tsp Cumin Seeds jeera
- 1/2 tsp Chili Powder adjust to taste, red
- 1/4 tsp Asafoetida hing
Instructions
Prepare the Ingredients
- Soak the black chickpeas in water overnight or for at least 6-7 hours. Boil the soaked chickpeas in a pressure cooker with 1 cup of water until soft (about 4-6 whistles). Alternatively, boil in a pot until tender. Separately, boil the beetroot pieces until tender but not mushy.
Sauté the Spices
- Heat the oil in a medium-sized pan or kadhai over medium heat. Add the cumin seeds and mustard seeds. Sauté until the mustard seeds begin to splutter.
Combine and Simmer
- Add the asafoetida, sauté briefly, and then stir in the red chili powder. Add the grated coconut and mix well. Add the boiled beetroot and black chickpeas. Stir gently to combine. Add salt to taste and cook for another 2-3 minutes to allow flavors to meld.
Serve and Enjoy
- Remove from heat and serve warm. This curry is delicious as a salad, a side dish with rice, or as a hearty snack.
