Ingredients

- 4 cup Water
- 2 tbsp Jaggery or palm sugar, adjust to taste
- 2 tbsp Lemon Juice freshly squeezed
Tea
- 2 tsp Tea strong brew tea leaves or powder. assam or strong english breakfast recommended, black

Prepare the Ingredients
- Lightly crush the cardamom pods. Peel and grate the fresh ginger. Juice the lemons.
Brew the Chai
- In a small saucepan, bring the water to a rolling boil. Add the crushed cardamom pods and grated ginger. Simmer for 2 minutes.
Add Tea and Sweetener
- Add the black tea leaves or powder and jaggery to the saucepan. Stir well and continue to simmer for another 2-3 minutes, or until the desired strength is achieved.
Finish and Serve
- Remove from heat and stir in the lemon juice. Strain the chai through a fine-mesh sieve into a serving glass or mug. Serve hot immediately.
