Ingredients

- 1 cup Coriander seeds
- 1 cup Pigeon Pea also known as pigeon peas or split yellow pigeon peas
- 1/2 cup Chili adjust to your spice preference; remove stems, red
- 2 tsp Peppercorn black
Spices for Separate Roasting

- 2 tsp Turmeric powder, adjust to taste

Dry Roasting the Spices
- Dry roast the toor dal, coriander seeds, peppercorns, and red chilies in separate pans over medium heat until fragrant and slightly warm. Do not brown.
Dry Roasting Urad Dal and Fenugreek
- Dry roast the urad dal and fenugreek seeds separately until they turn light brown.
Cooling and Grinding
- Allow all roasted spices to cool completely.
Blending into Powder
- Combine all cooled spices and turmeric powder. Grind to a very fine powder using a spice grinder or blender.
