Instructions

Prepare the Paneer

  • Shallow fry the paneer cubes in 1 tbsp oil until lightly golden. Set aside.

Sauté Aromatics

  • Heat 2 tbsp oil in a pressure cooker or pot. Add sliced onions and sauté until light brown.
  • Add ginger, garlic, and green chilies. Sauté for 2 minutes. Remove from heat and let cool.

Blend and Simmer

  • Blend the onion-garlic mixture with tomato puree until smooth. Return to the pan and simmer over medium heat for 5-7 minutes, stirring frequently, until the oil separates.

Add Peas and Water

  • Add frozen green peas, turmeric powder, garam masala, paprika, and salt. Stir well. Add 2.5 cups of water.

Pressure Cook (or Simmer)

  • Bring to a boil. If using a pressure cooker, close the lid and cook for 15 minutes (or until 2-3 whistles). Allow pressure to release naturally.
  • If not using a pressure cooker, simmer uncovered until the sauce thickens, about 15-20 minutes.

Finish and Serve

  • Stir in milk or cream (if using) to adjust consistency. Add the shallow-fried paneer cubes and simmer for 2-3 minutes.
  • Garnish with cilantro and serve hot with rice or naan.

Recipe Notes

Expert Tips for Perfect Matar Paneer

  • For extra flavor, add a pinch of kasuri methi (dried fenugreek leaves) along with the peas.
  • Adjust the amount of green chilies according to your spice preference.
  • Soaking the paneer in hot water for 10-15 minutes before frying will make it softer and prevent it from becoming crumbly.
  • Don't overcook the peas, as this will make them mushy. Aim for a tender-crisp texture.
