For the Paneer

For the Onion-Cashew Paste

  • 2 Onions medium-sized, finely chopped
  • 5 Cashews raw, soaked in hot water for 15 minutes

For the Tomato Puree

  • 2 Tomatoes large, blanched and peeled

Prepare the Onion-Cashew Paste

  • Blanch finely chopped onions and soaked cashews in boiling water for 2 minutes. Immediately transfer to ice water to stop the cooking process. Drain well, and blend into a smooth paste.

Prepare the Tomato Puree

  • Blanch tomatoes, peel, and puree until smooth. Strain to remove seeds for a smoother gravy.

Make the Spice Mixture

  • In a small bowl, whisk together chili powder, turmeric powder, garam masala, cumin powder, coriander powder, sugar, and salt in 1/2 cup of lukewarm milk. Set aside.

Cook the Sauce

  • In a pan, melt butter over medium heat. Add the onion-cashew paste and ginger-garlic paste, sauté until golden brown.

Simmer the Gravy

  • Stir in tomato puree and spice mixture. Cook until the butter separates from the sauce, stirring occasionally.

Add Paneer and Finish

  • Add the paneer cubes and crushed Kasuri Methi. Add water as needed to reach desired consistency (you can use the water from blanching the onions and cashews). Simmer for a few minutes to allow the flavors to blend.

Garnish and Serve

  • Stir in Kashmiri red chili powder (optional) before removing from heat. Garnish with fresh coriander leaves and a dollop of butter. Serve hot with naan, roti, or rice.
