- 1 cup Chickpea Flour also known as besan or chickpea flour. ensure it's finely sifted for a smoother texture.
- 1 cup Sugar powdered, use fine granulated powdered sugar for best results.
Wet Ingredients
- 3/4 cup Clarified Butter clarified butter; use a good quality ghee for optimal flavor.
- 2 tbsp Milk whole milk is recommended.
- 1/4 cup Water use as needed to adjust consistency.

- Sift the gram flour thoroughly to remove any lumps.
Cooking the Mysore Pak
- In a heavy-bottomed pan or microwave-safe bowl, combine the ghee and sifted gram flour. Mix well to ensure no dry flour remains.
- Cook the mixture over medium-low heat, stirring continuously, until the mixture turns light golden brown and a fragrant aroma develops. This takes approximately 8-10 minutes on the stovetop, or adjust microwave time as needed in 1-minute intervals, stirring between each interval to avoid burning.
- Gradually add the powdered sugar and milk, stirring vigorously to prevent lumps from forming. Continue stirring until the mixture thickens and starts to leave the sides of the pan.
- If the mixture appears too thick, add water, one tablespoon at a time, until you reach a desired consistency. The mixture should be thick enough to hold its shape but still pourable.
- Pour the mixture into a greased 8x8 inch baking pan or similar sized container. Allow it to cool completely before cutting it into squares.

- Once completely cool, cut the Mysore Pak into small, bite-sized squares.
