  • 1 cup Farsan or a crunchy indian snack mix
  • 6 Pav Buns lightly toasted or warmed
  • 1/4 cup Coriander Leaves finely chopped
  • 1/4 cup Onion finely chopped, for garnish
  • 1 Lemon cut into wedges

Instructions
 

  • Soak the moth beans in enough water for 5-6 hours.
  • Drain the water and leave the beans covered overnight to sprout. This enhances their digestibility and nutritional value.
  • Heat the oil in a large pot or Dutch oven over medium heat.
  • Add the chopped onions and sauté until translucent, about 5-7 minutes.
  • Add the curry leaves, mustard seeds, and cumin seeds. Sauté for a minute until fragrant.
  • Stir in the ginger-garlic paste and sauté for another minute until the raw smell disappears.
  • Add the turmeric powder and red chili powder. Cook for 30 seconds, stirring constantly, to prevent burning.
  • Add the chopped tomato and salt. Mix well and cook until the tomato softens, about 5 minutes.
  • Add the sprouted moth beans and mix thoroughly with the spices and vegetables.
  • Pour in enough water to cover the beans by about an inch. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the beans are tender.
  • Stir in the garam masala. This adds a final layer of aromatic complexity.
  • To assemble the Misal Pav, place a portion of farsan in a serving bowl.
  • Pour a generous amount of the 'tarri' (spicy gravy) over the farsan, allowing it to soak up the flavors.
  • Top with the cooked sprouted moth beans.
