Ingredients
Mutton & Marinate
Aromatics & Spices
- 2 tbsp Vegetable Oil
- 2 Cloves
- 1 stick Cinnamon
- 3 Cardamom green cardamom recommended, pods
- 5 Onion finely chopped, large
- 3 Chili Pepper green, slit lengthwise
- 1 tbsp Ginger ginger-garlic paste
Spices & Seasoning
- 2 tsp Chili Powder red
- 2 tsp Coriander Powder
- 1 tsp Turmeric powder
- 1.5 tsp Garam Masala
- Salt to taste
- 2 tbsp Coriander 1 tbsp for garnish, chopped; 1 tbsp for cooking, fresh
Instructions
Prepare the Mutton
- Clean the mutton and marinate it with 1 tbsp ginger-garlic paste and 1 tsp turmeric powder. Pressure cook for 3-4 whistles or until tender. Set aside, reserving the cooking liquid.
Sauté Aromatics and Spices
- Heat oil in a thick-bottomed pan or Dutch oven. Add cloves, cinnamon, and cardamom pods. Sauté for 30 seconds until fragrant. Add chopped onions and green chilies, sauté until translucent. Add 1 tbsp ginger-garlic paste and sauté until the raw smell disappears.
Build the Curry
- Add red chili powder, coriander powder, turmeric powder, and garam masala. Mix well and sauté for a minute. Add the cooked mutton along with the reserved cooking liquid. Stir in salt to taste and simmer until flavors meld and the sauce thickens slightly.
Final Touches
- Stir in 1 tbsp of chopped coriander leaves. Simmer for another 5 minutes. Garnish with remaining coriander leaves and serve hot with your favorite accompaniments.
