Instructions
Preparing the Aromatics
- Heat olive oil in a large pot over medium heat. Add minced garlic, rosemary, thyme, and bay leaves. Sauté for 3 minutes, until fragrant.
Adding the Tomatoes
- Add the chopped tomatoes (or canned tomatoes, crushed by hand) to the pot. Stir well to combine with the aromatics.
Simmering the Sauce
- Reduce heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, stirring occasionally to prevent sticking. The longer it simmers, the richer the flavor.
Adding the Remaining Ingredients
- Stir in balsamic vinegar, tomato puree, brown sugar, paprika, salt, and pepper. Continue to simmer uncovered for 15-20 minutes, allowing the sauce to thicken slightly.
Blending (Optional)
- If desired, carefully transfer the sauce to a blender (in batches if necessary) and blend until smooth. Return to the pot.
