Ingredients

- 250 gm Cottage Cheese indian cottage cheese, cut into 1-inch cubes
- 3 tbsp Yogurt plain, thick (curd)
- 1 tsp Cumin Seeds
- 1.5 tsp Salt or to taste
- 1 tsp Chili Powder red
- 1 tsp Coriander Powder (dhania)
- 1/3 tsp Garam Masala
- 2 Cardamom Pods (elaichi), lightly crushed
- 2 Bay Leaves
- 2 Cloves
- 5 Peppercorns black
- 2 inch Cinnamon Stick
- 1 tbsp Lemon Juice
- 3 tbsp Vegetable Oil
Instructions
Prepare the Spice Paste
- Heat 1 tablespoon of oil in a pan. Add the onion, tomatoes, green chilies, garlic, and ginger. Sauté for 1 minute on high heat.
- Add spinach and coriander. Cook for 2 minutes on high heat until spinach wilts. Let cool, then blend into a smooth paste using a food processor or blender.
Cook the Curry
- Heat the remaining 2 tablespoons of oil in a pan or wok. Add the cardamom, cinnamon, cloves, bay leaves, peppercorns, and cumin seeds. Sauté until the cumin seeds begin to splutter.
- Add the prepared spinach puree and cook, stirring frequently, until the oil separates from the mixture.
- Stir in the yogurt, salt, red chili powder, coriander powder, and garam masala. Cook for another 3 minutes on low heat.
- Gently add the paneer cubes to the curry and cook for 2 minutes on low heat, ensuring the paneer doesn't break apart.
- Remove from heat and stir in the lemon juice. Mix well.
Serve
- Serve hot with chapati, naan, or rice.
