Ingredients
For the Mohanthal
- 2 cup Gram Flour besan
- 3/4 cup Clarified Butter
- 1/2 cup Milk plus an additional 3 tablespoons for adjusting consistency
- 1/4 tsp Cardamom Powder
- 1/2 cup Nuts cashews, chopped; such as almonds, mixed, pistachios - for garnish
Instructions
Preparing the Mohanthal Mixture
- Mix gram flour, ghee, and 3 tablespoons of milk in a blender until it resembles fine breadcrumbs.
Cooking the Mohanthal
- Heat the remaining 3 tablespoons of ghee in a heavy-bottomed pan or kadhai over low heat. Add the blended gram flour mixture.
- Cook for 20-30 minutes, stirring continuously, until the mixture is fragrant and light golden brown, and oil begins to separate. Gradually add the remaining milk (1/2 cup), stirring constantly to prevent lumps and ensure a smooth consistency.
Making the Sugar Syrup
- In a separate saucepan, combine sugar and water. Bring to a simmer over medium heat, stirring until the sugar dissolves completely. Add saffron strands and cardamom powder; stir well.
Combining and Setting
- Pour the sugar syrup into the cooked gram flour mixture. Stir gently to combine thoroughly.
Setting and Serving
- Transfer the mixture to a greased and lined 8x8 inch baking pan or similar sized tray. Let it cool completely and then refrigerate for at least 4-5 hours, or preferably overnight, to allow it to set firmly. Once set, cut into diamond or square pieces and garnish with chopped nuts.
