Ingredients
For the Dough
- 2 cup All-Purpose Flour also known as maida
- 1 tsp Salt
- 3/4 cup Water warm water, adjust as needed for dough consistency
For the Filling
- 1 lb Meat a mix of lamb, and beef is traditional, but you can use your preferred type., ground, pork
- 1/2 cup Water cold water, to create juicy dumplings
- 1/2 cup Coriander fresh, chopped; or substitute with parsley
- 1 tbsp Pepper freshly ground, black, for best flavour
- 1 tsp Salt to taste
- 1 tsp Onion finely chopped; optional, for extra flavour
Instructions
Prepare the Dough
- Combine flour and salt in a bowl. Gradually add warm water, kneading until a smooth, elastic dough forms. Cover and let rest for at least 30 minutes.
Prepare the Filling
- In a separate bowl, combine ground meat, cold water, chopped cilantro, black pepper, salt, and optional onion. Mix thoroughly and let rest for 30 minutes to allow flavours to meld.
Assemble the Khinkali
- Lightly flour a clean surface. Roll out small portions of the dough into thin circles. Add about 1 tablespoon of the meat filling to the center of each circle.
- Gently pleat the dough around the filling, creating a dumpling shape. Leave a small opening at the top to allow for the juices to form.
Cook the Khinkali
- Bring a large pot of salted water to a rolling boil. Carefully add the Khinkali to the boiling water. Cook for 7-8 minutes, or until the dumplings float to the surface and are cooked through. Remove with a slotted spoon.
