Ingredients
 

Chana Dal Preparation

  • 250 gm Chickpea split chickpeas
  • 500 ml Milk whole cow's milk recommended
  • 2 leaves Bay Leaf

Sweetening and Flavoring

  • 100 gm Jaggery adjust to taste, powdered
  • 2 tbsp Clarified Butter for richer flavor, homemade clarified butter
  • 2 tbsp Coconut freshly grated
  • 1 tbsp Raisin
  • 1 tbsp Cashew chopped
  • 1 tsp Cardamom also known as elaichi, ground cardamom
  • Pinch Salt to enhance the flavors

Prepare the Chana Dal

  • Boil the chana dal, bay leaves, and milk in a heavy-bottomed pan until the dal is completely soft and cooked through. This may take 20-30 minutes. Once cooked, mash the dal well with a potato masher or the back of a spoon to form a smooth paste.

Cook the Halwa

  • Heat the desi ghee in a separate pan over medium heat. Add the chana dal paste and stir continuously, ensuring it doesn't stick to the bottom. Continue to stir and cook until the paste starts to leave the sides of the pan and turns a golden brown. This could take 15-20 minutes.

Incorporate Sweeteners and Nuts

  • Add the powdered jaggery and stir well until it dissolves completely and mixes into the dal. Then add the cardamom powder, grated coconut, raisins, and cashews. Continue to stir until everything is well combined and the halwa thickens further.

Finishing Touches

  • Once the halwa reaches a desired consistency (thick and slightly firm), remove from the heat and allow it to cool slightly. Garnish generously with chopped cashews and fresh rose petals before serving. Serve warm or at room temperature.
