Ingredients
For the Chicken Marinade
- 1 Chicken dressed and skin-on, whole
- 1 cup Yogurt
- 1 cup Onion Paste
- 2 tsp Ginger Paste
- 4 tsp Garlic Paste
- 1 tsp Chili Powder red
- 4 tsp Coriander ground
- 2 tsp Cumin ground
- 0.5 tsp Salt
For the Rice
- 500 gm Dehradun Rice soaked
- 1 tsp Turmeric Powder
- 4 tsp Coriander ground
- 2 tsp Cumin ground
- 0.5 cup Ghee
- 1.5 tsp Salt or to taste
- 3 Bay Leaves
Whole Garam Masala
- 2 tsp Garam Masala
- 1 tsp Cinnamon ground
For the Finishing Touch
- 1 cup Onion chopped
- 0.5 cup Oil
- 1 tsp Rose Water
- 1 tsp Kewra Water
- 1 tsp Kashmiri Chili Powder red
- 2 tsp Coconut Cream
- 0.5 tsp Sugar
Instructions
- Marinate the whole, dressed chicken. This step ensures the chicken is flavorful and tender.
- In a bowl, combine the yogurt, onion paste, ginger paste, garlic paste, red chili powder, ground coriander, ground cumin, and salt. Mix well.
- Coat the chicken thoroughly with the marinade. Let it marinate for 30-45 minutes to allow the flavors to penetrate.
- In a separate bowl, combine the soaked rice, turmeric powder, ground coriander, ground cumin, and ghee. Gently rub the spices and ghee into the rice.
- In a large saucepan, bring water to a boil. Add bay leaves, whole garam masala, salt, and the prepared rice. Parboil the rice until it's about half cooked. This ensures the rice cooks evenly in the chicken.
- Carefully stuff the marinated chicken with the parboiled rice. Secure the skin to enclose the rice filling.
- Heat oil in a deep pan. Place the stuffed chicken in the pan and cover. Cook for 15 minutes, turning occasionally, until the chicken is golden brown and cooked through.
- Remove the chicken from the pan and let it rest for a few minutes. Carefully remove the skin and carve the chicken into pieces. The fragrant rice stuffing will spill out.
- In the same pan, sauté the chopped onions in ghee until translucent. Add the cooked rice, rose water, kewra water, Kashmiri red chili powder, coconut cream, and sugar. Gently mix to combine.
- Serve the Chicken Stuffed Biryani hot. Garnish with fresh herbs, if desired.
