Ingredients
Fish Eggs
- 250 gm Fish Eggs roe
Spices and Aromatics
- 2 tsp Turmeric Powder
- 1 tsp Chili Powder red
- 1 tsp Cumin Seeds
- 2 tsp Coriander Powder
- 1 tsp Garam Masala
Pastes and Produce
- ½ cup Onion Paste
- 1 tsp Garlic Paste
- 2 tsp Ginger Paste
- ½ cup Tomato Paste
- 2 tsp Chilies chopped, green
- 2 tsp Coriander Leaves chopped, fresh
Instructions
- Gently wash the fish eggs and cut them into bite-sized pieces. Larger eggs are preferred for easier handling.
- In a bowl, combine the fish eggs with turmeric powder and salt. This pre-treatment helps to remove any fishy odor and adds flavor.
- Heat 2 tablespoons of oil in a frying pan over medium heat. Sauté the fish eggs until they are lightly browned and cooked through. Set aside.
- Add 2 more tablespoons of oil to the same pan. Add the onion paste, ginger paste, and garlic paste. Sauté until fragrant and lightly golden.
- Add the turmeric powder, cumin seeds, coriander powder, tomato paste, and salt. Cook for a few minutes, stirring constantly, until the spices are fragrant and the tomato paste deepens in color.
- Pour in ½ cup of water and bring to a simmer. Add the sautéed fish eggs to the curry. Cover the pan and simmer for 10 minutes, allowing the flavors to meld.
- Stir in the chopped green chilies and garam masala. Garam masala is added towards the end to preserve its delicate aroma.
- Garnish with fresh coriander leaves. Serve hot with rice or roti.
Recipe Notes
Good To Know
- Lightly pan-fry the fish eggs before adding them to the curry to help them retain their shape and impart a deeper, nuttier flavor.
- For a tangier, more authentic Bangladeshi taste, add a few pieces of green mango or a squeeze of fresh lime towards the end of cooking.
- If fresh fish eggs are unavailable, you can substitute with frozen roe, just be sure to thaw and drain them thoroughly.
- Serve with steamed rice and thinly sliced raw onions or fresh coriander for a refreshing contrast.
Expert Tips
- For a richer flavor, use coconut milk instead of water for part of the liquid in the curry.
- Adjust the amount of chili to your preferred level of heat.
- A touch of turmeric added to the rice while steaming will complement the curry beautifully.
Storage Instructions
- Refrigerate leftovers in an airtight container for up to 3 days.
- Reheat gently on the stovetop or in the microwave, adding a splash of water or stock if needed to loosen the sauce.
