Ingredients
For the Phirni
- 1/2 cup Basmati Rice soaked for at least 30 minutes
- 2 cup Milk
- 1/2 cup Sugar adjust to your sweetness preference
- 1/4 tsp Saffron Threads a pinch more is fine
- 1/2 tsp Cardamom Powder elaichi
For the Apricot Infusion
For Garnish
- 2 tbsp Apricots for garnish, chopped
- 1 tsp Pistachios chopped (optional)
Instructions
Prepare the Rice
- Soak the basmati rice in water for at least 30 minutes. Drain well and grind into a coarse paste using a blender or food processor.
Cook the Phirni
- Heat the milk in a heavy-bottomed saucepan over medium heat. Once simmering, gradually add the rice paste, stirring continuously to prevent lumps from forming.
Infuse with Flavors
- Continue stirring until the rice is cooked and the mixture has thickened into a creamy consistency (about 15-20 minutes). Add the sugar and stir until dissolved. Gently stir in the saffron threads and cardamom powder.
Add Apricots & Finish
- If using, soak the chopped dried apricots in 2 tablespoons of warm water for 10 minutes to soften. Add the soaked apricots to the phirni and stir well. Cook for another 2-3 minutes.
Serve
- Remove from heat and let the phirni cool slightly. Pour into serving bowls or glasses. Garnish with chopped apricots and pistachios (optional). Serve warm or chilled.
