  • Wash the dried apricots. Soak them in enough water overnight to rehydrate.

  • The next day, remove the apricots from the soaking water and reserve the water. Deseed the apricots and set the almonds aside.
  • In a pot over medium-high heat, combine the deseeded apricots and the reserved soaking water. Cook until the apricots are tender, about 20-25 minutes. Stir occasionally.
  • While the apricots are cooking, prepare a sugar syrup. In a separate saucepan, combine the sugar and 1/2 cup of water. Cook over medium-high heat, stirring constantly, until the syrup reaches a one-string consistency. This means that when a drop of syrup is lifted between two fingers, it forms a thin string. Set the syrup aside.
  • Once the apricots are tender and the water has mostly evaporated, creating a glossy sheen, stir in the prepared sugar syrup and cardamom powder.
  • Add the lemon juice. The lemon juice enhances the flavor of the dish and balances the sweetness. Mix well.
  • Blanch the reserved almonds by soaking them in hot water for a few minutes. Then, peel off the skins.
  • Serve the Qubaani ka Meetha warm or chilled. Garnish with fresh cream and the blanched almonds for an elegant presentation.
