  • Wash and thinly slice the apples. In a saucepan, combine water and granulated sugar. Bring to a simmer over medium heat, stirring until sugar dissolves. Add apple slices, cinnamon stick, and cardamom pods. Simmer gently until apples are tender, about 10-15 minutes.

Thicken the Compote

  • Remove the cinnamon stick and cardamom pods. Increase heat to medium-high and continue to simmer, stirring frequently, until the compote thickens to a glaze-like consistency, about 5-7 minutes. Set aside to cool.

Make the Financier Batter

  • Preheat oven to 350°F (175°C). In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Assemble and Bake

  • Fill greased mini muffin tins about ¾ full with batter. Arrange the cooled apple slices on top of each financier, forming a rose shape. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
