Ingredients
For the Apple Compote
- 2 Apple granny smith or honeycrisp recommended
- 200 gm Sugar granulated
- 300 ml Water
- 1 stick Cinnamon Stick
- 2 Cardamom Pods lightly crushed
For the Financiers
- 200 gm Cake Flour sifted
- 150 gm Sugar granulated
- 100 gm Butter melted and slightly cooled, unsalted
- 1 tsp Vanilla Extract
- 1 tsp Baking Powder
- 0.33 tsp Baking Soda
- 2 Large Eggs
Instructions
Prepare the Apple Compote
- Wash and thinly slice the apples. In a saucepan, combine water and granulated sugar. Bring to a simmer over medium heat, stirring until sugar dissolves. Add apple slices, cinnamon stick, and cardamom pods. Simmer gently until apples are tender, about 10-15 minutes.
Thicken the Compote
- Remove the cinnamon stick and cardamom pods. Increase heat to medium-high and continue to simmer, stirring frequently, until the compote thickens to a glaze-like consistency, about 5-7 minutes. Set aside to cool.
Make the Financier Batter
- Preheat oven to 350°F (175°C). In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Assemble and Bake
- Fill greased mini muffin tins about ¾ full with batter. Arrange the cooled apple slices on top of each financier, forming a rose shape. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Glaze and Serve
- Let the financiers cool slightly in the tins before transferring them to a wire rack to cool completely. Once cooled, drizzle the apple compote glaze over the top. Serve and enjoy!
Recipe Notes
Expert Tips for Perfect Apple Rose Financiers:
- For the best results, use high-quality ingredients. The flavor of your butter and vanilla will shine through in these delicate cakes.
- Don't overmix the financier batter! Overmixing will develop the gluten in the flour, resulting in tough cakes.
- If you don't have mini muffin tins, you can bake these in a standard muffin tin, but adjust the baking time accordingly. They may require a slightly longer baking time.
- Get creative with the apple arrangement! Try different shapes and patterns for a unique presentation.
