Ingredients
- 6 Eggs
- 2 Onion medium
- 3 Tomatoes medium
- 1 tsp Ginger chopped
- 1 tsp Garlic chopped
- 2 tbsp Coriander dhania, chopped
- 2 tsp Pav Bhaji Masala
- 1 tsp Cumin Seed jeera
- 2 tbsp Refined Oil
- 1/2 tsp Turmeric Powder haldi
- 1 tsp Chilli Powder mirch
- 1/2 tsp Mustard Seeds rai
- 15 gm Cheese goat
- 1 tsp Chilli chopped, green
- 1.5 tsp Salt or as per taste
- 2.5 Pav
- 2 tbsp Butter
Instructions
Prepare the Eggs
- Boil 2 eggs until hard-boiled. Chop these boiled eggs.
Sauté Aromatics
- Heat vegetable oil in a pan over medium heat. Add mustard seeds and let them splutter. Add ginger, garlic, and green chilies. Sauté for 30 seconds.
Add Onions and Tomatoes
- Add finely chopped onions and sauté until they soften and turn translucent. Add finely chopped tomatoes and sauté until they soften slightly.
Spice it Up
- Stir in pav bhaji masala, cumin powder, chili powder, turmeric powder, and salt. Cook for 1-2 minutes until fragrant.
Scramble the Eggs
- Crack 4 eggs into the pan. Gently scramble the eggs into the onion-tomato mixture until cooked through.
Incorporate Boiled Eggs and Cheese
- Stir in the chopped boiled eggs and grated goat cheese. Mix well and garnish with chopped cilantro.
Cook Sunny-Side Up Eggs
- In a separate non-stick pan, cook two sunny-side up eggs.
