Ingredients
Potatoes
- 8 Potatoes medium
Paneer Filling
- 100 gm Cottage Cheese
- 1 pinch Chili Powder red
- 1 pinch Salt
- 1 pinch Pepper black
- 1 pinch Chaat Masala
Gravy
- 6 Tomatoes chopped, medium
- 4 clove Garlic
- 2 tbsp Fenugreek Leaves kasuri methi, dried
- 1/2 tsp Turmeric Powder
- 1 tsp Coriander Powder
- 1/2 tsp Garam Masala
- 1/2 cup Water
- 2 tbsp Oil divided
Instructions
- Peel the medium potatoes.
- Using the back of a spoon, carefully scoop out a portion of the potato flesh, creating a cavity. Reserve the scooped-out potato for another use, such as adding to the gravy.
- In a bowl, mash the paneer until smooth. Add the red chili powder, salt, black pepper, and chaat masala. Mix well to combine.
- Heat 2 tablespoons of oil in a wok or large pot over medium-high heat. Carefully add the hollowed-out potatoes and deep-fry until golden brown. This helps create a crispy exterior. Remove the potatoes and place them on a paper towel-lined plate to drain excess oil.
- Gently fill the potato cavities with the spiced paneer mixture.
- In a blender, combine the chopped tomatoes and garlic cloves. Blend until a smooth puree is formed.
- Heat the remaining 2 tablespoons of oil in a large pot or pan over medium heat. Add the tomato-garlic puree and cook until it slightly thickens and the raw smell disappears, about 5-7 minutes. This step is crucial for developing the flavor of the gravy.
- Add the dried fenugreek leaves, turmeric powder, coriander powder, and garam masala to the pot. Stir well to combine.
- Pour in 1/2 cup of water and add any reserved scooped-out potato pieces. Bring the mixture to a simmer and cook for about 10 minutes, allowing the gravy to thicken slightly.
- Gently place the paneer-stuffed potatoes into the gravy. Cover the pot and simmer for another 5 minutes, allowing the potatoes to heat through and the flavors to meld.
