Ingredients
 

Spices & Aromatics

Produce

  • 1 Mango about 1 cup, finely chopped, raw
  • 500 gm Potato baby potatoes, about 1 inch in diameter, small

Other Ingredients

  • 250 ml Mango Juice freshly squeezed or store-bought
  • 2 tbsp Oil vegetable or canola oil
  • Salt Salt to taste

Instructions
 

Spice Tempering

  • Heat oil in a pan over medium heat. Add mustard seeds, cumin seeds, and fenugreek seeds. Once the seeds splutter, add asafoetida and curry leaves. Sauté for 15 seconds until fragrant.

Sauté Aromatics

  • Add finely chopped ginger and garlic. Sauté for about 1 minute until fragrant.

Add Mango and Spices

  • Add the chopped raw mango, turmeric powder, coriander powder, and red chili powder. Mix well and sauté for 30 seconds.

Combine with Potatoes

  • Add the baby potatoes, salt, and black salt. Toss well to coat the potatoes with the spice mixture.

Simmer in Mango Juice

  • Pour in the mango juice. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the potatoes are tender but still hold their shape. Stir occasionally to prevent sticking.

Serve

  • Serve the Aamras Ke Aloo hot with roti, paratha, naan, or rice. Garnish with fresh coriander leaves (optional).
