Ingredients
For the Aamras
For the Puris (makes approximately 8)
- 1 cup All-Purpose Flour
- 1/2 tsp Salt
- 1/4 cup Water plus more as needed
- 2 tbsp Clarified Butter for frying
Instructions
Prepare the Aamras
- Wash, peel, and cube the mangoes.
- In a small bowl, soak saffron threads in 1 tablespoon of warm milk for at least 10 minutes to release color and flavor.
- Combine mango cubes, sugar, and cardamom powder in a blender. Blend until completely smooth.
- Stir in the remaining milk (including the saffron milk) and blend again until a creamy consistency is achieved.
- Taste and adjust sweetness as needed.
- Refrigerate the Aamras for at least 30 minutes to chill.
Make the Puris
- In a large bowl, combine all-purpose flour and salt. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic.
- Cover the dough and let it rest for at least 15 minutes.
- Roll out small portions of the dough into thin, round circles (about 4 inches in diameter).
- Heat ghee or oil in a deep skillet or wok over medium-high heat.
- Carefully place puris in the hot oil and fry until golden brown and puffed up, about 1-2 minutes per side.
- Remove puris and drain on paper towels.
Serve
- Serve the chilled Aamras with warm, freshly fried puris. Enjoy!
