Ingredients
 

For the Aamras

  • 2 large Mango about 1.5 lbs total, ripe alphonso mangoes preferred
  • 1/4 cup Sugar adjust based on mango sweetness, or to taste
  • 1/4 tsp Cardamom finely ground
  • 1/2 tsp Saffron
  • 1/4 cup Milk chilled, full-fat recommended

Prepare the Aamras

  • Wash, peel, and cube the mangoes.
  • In a small bowl, soak saffron threads in 1 tablespoon of warm milk for at least 10 minutes to release color and flavor.
  • Combine mango cubes, sugar, and cardamom powder in a blender. Blend until completely smooth.
  • Stir in the remaining milk (including the saffron milk) and blend again until a creamy consistency is achieved.
  • Taste and adjust sweetness as needed.
  • Refrigerate the Aamras for at least 30 minutes to chill.

Make the Puris

  • In a large bowl, combine all-purpose flour and salt. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic.
  • Cover the dough and let it rest for at least 15 minutes.
  • Roll out small portions of the dough into thin, round circles (about 4 inches in diameter).
  • Heat ghee or oil in a deep skillet or wok over medium-high heat.
  • Carefully place puris in the hot oil and fry until golden brown and puffed up, about 1-2 minutes per side.
  • Remove puris and drain on paper towels.

Serve

  • Serve the chilled Aamras with warm, freshly fried puris. Enjoy!
