Soak barley in a bowl, separately soak chana dal, Moong Dal, Urad dal, toor dal together for 3 hrs.
Grind above soaked barley and dals, Add curd, lauki, turmeric, chili powder, salt, sugar, oil, ginger chili paste to the ground dals and barley, let it rest for about 6 hrs.
After 6 hours, Take a pan, add little oil, add mustard seeds, sesame seeds, hing, red chilies once it starts spluttering add batter(consistency should of idli or dhokla ).
Cover the lid and let it cook on medium flame for around 8 mins. Flip the side very carefully and cook for another 5 minutes. After 5 minutes its ready to serve.
