As it is, Handvo is super healthy and tasty. By adding my favourite ingredient, Oats to it , the health quotient is pushed up a notch.

Ingredients
  

  • 1 cup brown rice
  • 1/4 cup toor dal
  • 1/4 cup moong dal
  • 1/4 cup urad dal
  • 1/4 cup chana dal
  • 1/4 cup masoor dal red lentils
  • 1/4 cup instant oats
  • 1 cup vegetables assorted like grated lauki, boiled peas, chopped carrots etc.
  • Salt to taste
  • 1/2 teaspoon red chilli powder
  • 4-5 garlic cloves crushed
  • 1 teaspoon mustard seeds
  • 1/4 cup sour curd
  • 10 curry leaves
  • 1/4 cup coriander leaves finely chopped
  • 1 tablespoon white sesame seeds
  • 1/2 teaspoon baking soda
  • 1 green chili chopped
  • 2 tablespoon oil for tempering
  • 1/4 cup semolina rava

Instructions
 

  • Wash the rice and all dals. Soak them all for 5 hours .(I mix and soak all together only.) Grind using minimum water to a paste.
  • Add the rava and oats too and grind.
  • Add curd and give a whip. Add water to adjust batter consistency.
  • Keep covered overnight. Next morning , preheat the oven at 180 degrees for 10 minutes.
  • Add all vegetables ( go with your personal preference) Add salt, red chilli powder. Temper the mustard seeds. Add the garlic, sesame seeds and curry leaves.
  • Add half to the batter and keep half to garnish. Add green coriander leaves, green chili and baking soda.
  • Give couple of whisks with balloon whisk. Pour in a greased cake tin.
  • Bake for 15-20 minutes. Check with toothpick. Remove when done. Let it stand for 5 minutes.
  • Demould and garnish. Serve Hot With mint chutney.

Notes

  • Can be steamed in a steamer.
  • I like crunchy top hence I bake with both rods on.
