Ingredients
 

Vegetables

  • 1 Beetroot large, peeled and diced
  • 1 Potato large, peeled and diced
  • 1 cup Peas fresh or frozen, green
  • 1 cup Beans green, trimmed and chopped
  • 2 Carrot chopped, medium
  • 2 Chili Pepper finely chopped, green

Instructions
 

Prepare the Oats

  • Dry roast the rolled oats in a pan over medium heat until lightly golden. Set aside.

Prepare the Vegetables

  • Peel, wash, and dice the beetroot, potato, and carrot. Trim and chop the green beans.

Temper the Spices

  • Heat oil in a pan. Add mustard seeds and let them splutter. Add chana dal and urad dal and sauté until lightly browned. Add curry leaves and sauté for a few seconds.

Sauté Vegetables

  • Add the finely chopped green chilies and onion. Sauté until softened. Add the diced vegetables and 2 cups of water. Bring to a boil, then reduce heat, cover, and cook until the vegetables are tender.

Combine and Cook

  • Add the roasted oats to the pan. Stir well to combine. Cook for another 3-5 minutes, or until the oats are cooked through and the desired consistency is reached.

Finish and Serve

  • Remove from heat. Stir in lemon juice to taste. Garnish with chopped coriander leaves. Serve hot.
