Ingredients
Vegetables
Grains & Legumes
- 2 cup Rolled Oats
- 1 tbsp Chickpea split chickpeas
- 1 tbsp Lentil black, split black lentils
Seasoning & Flavoring
- 1 tbsp Onion finely chopped
- 1 tbsp Mustard Seeds rai
- 1 tbsp Oil vegetable or coconut oil
- 6 leaves Curry Leaves
- 1-2 tbsp Lemon Juice to taste
- 2 tbsp Coriander chopped, for garnish
- 2 cup Water
Instructions
Prepare the Oats
- Dry roast the rolled oats in a pan over medium heat until lightly golden. Set aside.
Prepare the Vegetables
- Peel, wash, and dice the beetroot, potato, and carrot. Trim and chop the green beans.
Temper the Spices
- Heat oil in a pan. Add mustard seeds and let them splutter. Add chana dal and urad dal and sauté until lightly browned. Add curry leaves and sauté for a few seconds.
Sauté Vegetables
- Add the finely chopped green chilies and onion. Sauté until softened. Add the diced vegetables and 2 cups of water. Bring to a boil, then reduce heat, cover, and cook until the vegetables are tender.
Combine and Cook
- Add the roasted oats to the pan. Stir well to combine. Cook for another 3-5 minutes, or until the oats are cooked through and the desired consistency is reached.
Finish and Serve
- Remove from heat. Stir in lemon juice to taste. Garnish with chopped coriander leaves. Serve hot.
