Instructions
Prepare the Vegetables
- Clean and finely chop the spinach. Blanch the green beans, carrots, and peas until tender-crisp, then cool completely.
Combine Ingredients
- In a large bowl, combine the mashed potatoes, blanched vegetables, rolled oats, corn flour, salt, pepper, green chilies, coriander, and lemon juice. Mix thoroughly until well combined.
Shape the Cutlets
- Form the mixture into small, flat cutlets. You can make them round or square, depending on your preference.
Fry the Cutlets
