  • 1 cup Spinach finely chopped
  • 1 cup Beans finely chopped, green
  • 1 cup Carrot finely grated
  • 1 cup Peas fresh or frozen, green
  • 2 Potato boiled and mashed, medium-sized

  • 1 tbsp Corn Flour (cornstarch)
  • 2 cup Rolled Oats old-fashioned or quick-cooking
  • Oil as needed, for frying (vegetable or canola)

Instructions
 

Prepare the Vegetables

  • Clean and finely chop the spinach. Blanch the green beans, carrots, and peas until tender-crisp, then cool completely.

Combine Ingredients

  • In a large bowl, combine the mashed potatoes, blanched vegetables, rolled oats, corn flour, salt, pepper, green chilies, coriander, and lemon juice. Mix thoroughly until well combined.

Shape the Cutlets

  • Form the mixture into small, flat cutlets. You can make them round or square, depending on your preference.

Fry the Cutlets
