Ingredients
- 1 cup All-Purpose Flour
- 1 tsp Carom Seeds ajwain
- 2 tbsp Oil
- 1 tsp Salt or as per taste
- 1 cup Water
- 2 tbsp Oil or oil for the oil
- 1 Chili chop, green
- 1 leaf Coriander chopped, dhania
- 1 tsp Chaat Masala
- 1 tsp Chili Powder kashmiri, red
- 2 Potato boiled and, large sized, mashed
- 4 tbsp Gram Flour besan
- 1/2 tsp Salt black
- Oil for deep frying
Instructions
Prepare the Dough
- Combine all-purpose flour, ajwain, salt, and oil in a bowl. Gradually add water, mixing with your hands until a soft, pliable dough forms. Let it rest for 15-20 minutes.
Make the Potato Filling
- Heat oil in a pan. Add green chilies, coriander leaves, chaat masala, Kashmiri red chili powder, and black salt. Sauté for a minute until fragrant.
- Add chickpea flour and fry until golden brown, stirring constantly. Stir in the mashed potatoes and salt. Mix well to combine. Remove from heat and set aside to cool slightly.
Assemble and Fry the Toffees
- Roll small portions of the dough into thin circles or small chapattis. Use a sharp knife or pizza cutter to make 3-4 cuts in each circle without cutting all the way through.
- Spoon some of the potato mixture into the center of each circle. Gently fold the edges of the dough over the filling to form a small, sealed parcel. Shape it into a toffee-like form.
- Heat oil for deep frying. Carefully place the potato toffees into the hot oil and fry until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
