Instructions

  • Create a double boiler by filling a wok or saucepan with a few inches of water and placing a heatproof glass bowl on top. Ensure the bottom of the bowl doesn't touch the water. Bring the water to a simmer.
  • Add the salted butter to the bowl. As it melts, add the chopped white chocolate. Stir gently and constantly until the chocolate is completely melted and smooth.
  • Remove the bowl from the heat. Stir in the sweetened condensed milk until fully incorporated. The mixture will be smooth and glossy.
  • Line an 8x8 inch baking dish or a square tin with parchment paper, leaving some overhang on the sides to help lift the fudge out later.

Recipe Notes

Good To Know

  • For a beautiful presentation, use a heart-shaped silicone mold or cookie cutter to cut the fudge before dusting with cocoa powder—perfect for Valentine’s Day gifting.
  • If you prefer a milder heat, infuse the butter with chili flakes and strain them out before mixing into the fudge; this allows you to control the spiciness without visible flakes.
  • To add extra crunch and flavor, toast the chopped almonds lightly in a dry pan before folding them into the fudge mixture.

Expert Tips

  • For a richer chocolate flavor, use high-quality dark chocolate with a cocoa content of 70% or higher.
  • Don't overmix the fudge once the chocolate is melted, as this can cause it to become grainy.
  • If you're short on time, you can skip the chili infusion and simply add a pinch of cayenne pepper to the fudge mixture for a hint of heat.

Storage Instructions

  • Store the fudge in an airtight container in the refrigerator for up to a week.
  • Let it sit at room temperature for 10 minutes before serving for the creamiest texture.
