  • 2 tbsp Vegetable Oil or your preferred cooking oil
  • 1 cup Water or as needed to adjust consistency

Marinate the Chicken

  • Wash and clean the chicken. In a large bowl, combine the chicken with apple cider vinegar, salt, red chili powder, and black pepper. Mix well with your hands and marinate for at least 30 minutes, or longer for maximum flavor.

Prepare the Curry Powder (Optional)

  • If using homemade curry powder, dry roast the following spices in a pan over low heat until fragrant: 2 tbsp coriander seeds, 1 tbsp cumin seeds, 1 tbsp fennel seeds, 1-inch cinnamon stick, 1/2 tsp fenugreek seeds, 1/2 tsp black mustard seeds, and 2 tsp turmeric powder. Grind the roasted spices into a powder.

Sauté Aromatics

  • Heat the oil in a large pan or pot over medium heat. Add the chopped onions, garlic, and ginger. Sauté until the onions are golden brown.

Add Tomatoes and Spices

  • Add the chopped tomatoes and curry powder to the pan. Cook for 5-7 minutes, stirring frequently, until the spices are fragrant and the tomatoes have softened slightly.

Simmer the Curry

  • Add the marinated chicken pieces and their marinade to the pan. Stir well to combine. Add water as needed to reach your desired consistency. Cover and simmer over medium-low heat for 20-25 minutes, or until the chicken is cooked through.

Serve

  • Once the chicken is cooked, remove from heat and serve hot with steamed rice or your favorite Indian bread.
