  • Reduce the heat to low and simmer, stirring occasionally, until the chutney thickens and most of the water evaporates. This will take approximately 20-25 minutes. The chutney is ready when it coats the back of a spoon.
  • Remove from heat and let the chutney cool slightly before serving. The flavors will deepen as it cools.

Recipe Notes

Good To Know

  • For a chunkier texture, reserve some diced mango and stir it in at the end of cooking.
  • If you prefer a spicier chutney, add finely chopped green chilies or red chili flakes during sautéing.
  • To balance tartness, use a mix of semi-ripe and ripe mangoes.

Expert Tips

  • Toasting the spices before adding the other ingredients will enhance their flavor and aroma.
  • For a smoother chutney, blend a portion of the finished product with an immersion blender before adding the reserved mango chunks.
  • Pair this mango chutney with grilled chicken, fish, or pork for a delicious flavor combination.

Storage Instructions

  • This chutney stores well in sterilized jars in the refrigerator for up to two weeks. Let it cool completely before sealing.
