Ingredients
Sweeteners & Spices
- 100 gm Jaggery
- 0.5 tsp Mustard Seeds rai
- 1 tsp Chili Flakes adjust to taste
- 2 tsp Desiccated Coconut
Acids & Seasoning
- 1 tbsp Lemon Juice
- 0.5 tsp Salt or to taste
- 1 tbsp Water for adjusting consistency, optional
Instructions
Preparation
- Keep the pineapple cubes separate.
- Roast the tomatoes until the skins blister. Peel and roughly chop the tomatoes.
Making the Chutney
- Heat a saucepan over medium heat. Add mustard seeds and chili flakes. Let the mustard seeds splutter.
- Add the chopped tomatoes, jaggery, salt, and desiccated coconut to the pan.
- Stir constantly until the mixture thickens and the jaggery dissolves. Add a tablespoon of water if needed to prevent sticking.
- Stir in the lemon juice and diced pineapple. Bring to a gentle simmer for 1-2 minutes.
- Remove from heat and let cool slightly before serving.
