Instructions
Prepare the Coconut Filling
- Dry roast the shredded coconut in a pan over medium heat until lightly browned and fragrant, stirring frequently to prevent burning. Remove from heat and let cool completely.
- Once cool, mix in the honey and brown sugar until well combined. Set aside.
Prepare the Plantains
- Trim the ends of the plantains and cut them lengthwise into halves. Make a shallow slit lengthwise down the center of each plantain half, being careful not to cut all the way through.
Stuff and Steam
- Gently spoon the coconut filling into the slit of each plantain half. Place the stuffed plantains in a steamer basket or an idli cooker. Steam for 10-12 minutes, or until the plantains are tender and heated through.
- Alternatively, microwave the stuffed plantains for 1-2 minutes, or until heated through. Drizzle with extra honey if desired.
Serve
- Serve the steamed plantains warm. Enjoy!
Recipe Notes
Expert Tips for Perfect Steamed Plantains
- For best results, use ripe plantains that are slightly soft to the touch. Avoid using underripe plantains, as they will be difficult to steam.
- Don't overfill the plantains with the coconut mixture; leave a little space to prevent the filling from overflowing during steaming.
- Adjust the amount of brown sugar or honey to your liking, depending on the sweetness of the plantains and your personal preference.
- If you don't have an idli cooker or steamer, you can also bake the stuffed plantains in a preheated oven at 350°F (175°C) for about 15-20 minutes, or until tender.
