  • 2 tbsp Sugar brown, or granulated sugar

  • In a pan, dry roast the grated coconut until the moisture evaporates. This toasts the coconut and enhances its flavor.

  • Trim both ends of each plantain. Cut each plantain in half lengthwise. Make a vertical slit in each plantain half, being careful not to cut all the way through. This creates a pocket for the filling.
