For the Cottage Cheese Filling:

  • 4-6 Banana Leaves fresh, large enough to wrap the filling
  • Water as needed, for steaming
  • Optional Rice for serving alongside, steamed

Instructions
 

Prepare the Filling

  • In a mixing bowl, combine couscous paste, coconut paste, sesame paste, green chili paste, hung curd, coconut oil, and salt. Mix well.
  • Gently fold in the cubed cottage cheese and raisins. Mix until just combined, being careful not to overmix.

Prepare the Banana Leaves

  • Gently warm the banana leaves for a few seconds to make them more pliable. This prevents tearing during wrapping.

Assemble and Steam

  • Place a portion of the cottage cheese mixture in the center of each banana leaf. Wrap securely, tucking in the sides and tying with kitchen twine or string.
  • Fill your steamer with water and bring to a rolling boil.
  • Carefully place the wrapped parcels in the steamer.
  • Steam for 10-12 minutes, or until the cottage cheese is heated through and the filling is firm.

Serve

  • Remove the steamed parcels from the steamer. Unwrap carefully and serve immediately, optionally garnished with fresh cilantro and served with steamed rice, if desired.
