Ingredients
Vegetables
- 2 medium Potatoes peeled and thinly sliced
- 1 medium Bitter Gourd karela, thinly sliced; removing seeds is optional but recommended to reduce bitterness
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 2-4 Chilies adjust to taste, green, slit or finely chopped
Protein
- 3 Eggs hard-boiled and roughly chopped
Spices & Aromatics
- 1 tsp Ginger-Garlic Paste
- 1 tsp Panch Phoron bengali spice blend, five spice blend, and fennel seeds if unavailable, mustard, substitute with a pinch of cumin
- 1/2 tsp Turmeric Powder
- 1 tsp Garam Masala
- 1 tsp Chili Powder adjust to taste
Instructions
Prepare the Aromatics
- Heat oil in a pan. Add panch phoron and let it splutter.
- Add ginger-garlic paste and sauté for a minute. Add onions and green chilies, sauté until softened. Add tomatoes and cook until mushy.
Add Spices and Vegetables
- Add turmeric powder, chili powder, and garam masala. Mix well.
- Add the sliced potatoes and bitter gourd. Mix thoroughly.
- Add 1/4 cup water (optional) and cover the pan. Cook on low heat until vegetables are tender.
Incorporate Eggs and Finish
- Add the chopped hard-boiled eggs. Gently stir to combine.
- Simmer for another 2-3 minutes to allow flavors to meld. Taste and adjust salt as needed.
- Turn off the heat, and serve hot.
