Ingredients
Vegetables
- 2 medium Bitter Gourd karela, thinly sliced
- 2 medium Potatoes peeled and thinly sliced
- 1 medium Onion finely chopped
- 3 Chilies green, slit lengthwise
Spices & Aromatics
- 1 tsp Ginger Garlic Paste
- 1 tsp Chili Powder
- 1 tsp Turmeric Powder
- 1/2 tsp Cumin Seeds jeera
- 1/2 tsp Coriander Powder dhania
- 1/2 tsp Garam Masala
- 1.5 tsp Salt or to taste
Other
- 2 tbsp Vegetable Oil
- 1.5 tbsp Coriander chopped, for garnish
Instructions
Prepare the Bitter Gourd
- To reduce bitterness, sprinkle salt on the sliced bitter gourd and let it sit for 10-15 minutes. Then, rinse and pat dry.
Sauté Aromatics
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add ginger-garlic paste and sauté for about a minute until fragrant.
Add Spices and Vegetables
- Add chopped onions and green chilies. Sauté until the onions soften, about 3-4 minutes. Stir in turmeric powder, chili powder, coriander powder, and garam masala. Sauté for another minute until fragrant.
Cook the Vegetables
- Add the potatoes and bitter gourd to the pan. Mix well to coat with the spices. Add salt to taste. Cook over medium-low heat, stirring frequently, until the potatoes are tender and the bitter gourd is cooked through (approximately 15-20 minutes).
