  • 2 medium Bitter Gourd karela, thinly sliced
  • 2 medium Potatoes peeled and thinly sliced
  • 1 medium Onion finely chopped
  • 3 Chilies green, slit lengthwise

Prepare the Bitter Gourd

  • To reduce bitterness, sprinkle salt on the sliced bitter gourd and let it sit for 10-15 minutes. Then, rinse and pat dry.

Sauté Aromatics

  • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add ginger-garlic paste and sauté for about a minute until fragrant.

Add Spices and Vegetables

  • Add chopped onions and green chilies. Sauté until the onions soften, about 3-4 minutes. Stir in turmeric powder, chili powder, coriander powder, and garam masala. Sauté for another minute until fragrant.

Cook the Vegetables

  • Add the potatoes and bitter gourd to the pan. Mix well to coat with the spices. Add salt to taste. Cook over medium-low heat, stirring frequently, until the potatoes are tender and the bitter gourd is cooked through (approximately 15-20 minutes).

Garnish and Serve

  • Stir in the chopped coriander leaves. Remove from heat and serve hot as a side dish with rice, roti, or naan.
