Ingredients
Okra Preparation
- 1 pound Okra fresh okra, ladies fingers, washed and trimmed
- 2 tbsp Vegetable Oil
Spice Blend
- 3 tsp Coriander Powder dhania, for best flavor, roast coriander seeds and then grind into powder, roasted
- 1 tsp Chili Powder mirch, adjust to your spice preference
- 1 tsp Mango Powder amchur, dry
- 1/2 tsp Sugar
- 2 tsp Anchar Masala a blend of spices, can be found at indian grocery stores; substitute with garam masala for similar flavor.
- 1.5 tsp Salt or to taste
Instructions
Prepare the Okra
- Cut the okra lengthwise into approximately 1/2-inch thick slices.
Make the Spice Paste
- In a small bowl, combine the roasted coriander powder, chili powder, dry mango powder, sugar, anchar masala, and salt. Mix well.
Combine and Marinate
- Add the okra slices to the spice mixture, and toss gently to coat. Add 1 tbsp of oil to help coat the okra and let marinate for at least 15 minutes (or longer for deeper flavor).
Shallow Fry the Okra
- Heat the remaining 1 tbsp of oil in a tawa (flat griddle) or large skillet over medium heat. Add the marinated okra, spreading in a single layer.
Cook and Serve
- Fry the okra, stirring occasionally, until tender-crisp and lightly browned (about 10-12 minutes). Adjust the heat as needed to avoid burning. Serve hot as a side dish or light meal.
