Jackfruit Preparation

  • 500 gm Jackfruit fresh or canned, young green jackfruit preferred; drained if canned

Prepare the Jackfruit

  • Wash the jackfruit thoroughly and slice it into bite-sized pieces. Wash again to remove any excess sap.

Fry the Jackfruit

  • Heat 2 tablespoons of oil in a large pan or wok over medium-high heat. Add the jackfruit and fry until golden brown, ensuring even browning on all sides. Remove and set aside.

Sauté Aromatics and Spices

  • Add the remaining 1 tablespoon of oil to the pan. Add the fenugreek seeds and cardamom pods and sauté for a few seconds until fragrant. Add the ginger-garlic paste and sauté for another minute until the raw aroma disappears.

Cook the Onions and Spices

  • Add the sliced onions and sauté until golden brown. Add the turmeric powder, red chili powder, and coriander powder. Cook the spices for about 1-2 minutes, stirring constantly, until fragrant.

Combine and Simmer

  • Add the fried jackfruit to the pan. Stir well to combine all the ingredients. Reduce heat to low, cover the pan, and simmer for 10-15 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.

Finish and Serve

  • Stir in the lemon juice. Garnish with freshly chopped coriander leaves. Serve hot with roti, naan, or paratha.
