Ingredients
For the Tempering
- 1 tbsp Oil
- 1 tsp Mustard Seeds rai
- 1/2 tsp Cumin Seeds
- 1 pinch Asafoetida hing
- 10 leaves Curry Leaves
- 1 Chili lal mirch, whole. adjust to your spice preference., dried, red
For the Chutney
- 4 Chilies chopped. adjust to your spice preference., green
- 2 clove Garlic big, roughly chopped
- 1 inch Ginger roughly chopped
- 1 medium Onion finely chopped
- 4 medium Tomatoes chopped, ripe
- 1/4 cup Coconut freshly grated, shredded
- 1/2 cup Mint Leaves chopped
- 1/4 cup Coriander dhania, chopped, optional
- 1 tbsp Tamarind Paste adjust to taste
- 1.5 tsp Salt or to taste
Instructions
Prepare the Tempering
- Heat oil in a kadai or pan. Add mustard seeds, cumin seeds, and asafoetida. Once the seeds splutter, add curry leaves and dried red chilies.
Sauté Aromatics
- Add green chilies, garlic, and ginger. Sauté for about a minute until fragrant.
Add Onion and Tomatoes
- Add the chopped onion and sauté until it turns pinkish. Then, add the chopped tomatoes and cook for 3-4 minutes, stirring occasionally.
Combine Ingredients
- Add the shredded coconut, mint leaves, and coriander leaves (if using). Cook until most of the water from the tomatoes has evaporated.
Season and Cool
- Stir in the tamarind paste and salt to taste. Allow the mixture to cool completely.
Blend to a Coarse Paste
- Once cool, use a blender or food processor to grind the mixture into a coarse paste. Don't over-blend; you want some texture.
Garnish and Serve
