Ingredients
 

For the Tempering

For the Chutney

  • 4 Chilies chopped. adjust to your spice preference., green
  • 2 clove Garlic big, roughly chopped
  • 1 inch Ginger roughly chopped
  • 1 medium Onion finely chopped
  • 4 medium Tomatoes chopped, ripe
  • 1/4 cup Coconut freshly grated, shredded
  • 1/2 cup Mint Leaves chopped
  • 1/4 cup Coriander dhania, chopped, optional
  • 1 tbsp Tamarind Paste adjust to taste
  • 1.5 tsp Salt or to taste

Instructions
 

Prepare the Tempering

  • Heat oil in a kadai or pan. Add mustard seeds, cumin seeds, and asafoetida. Once the seeds splutter, add curry leaves and dried red chilies.

Sauté Aromatics

  • Add green chilies, garlic, and ginger. Sauté for about a minute until fragrant.

Add Onion and Tomatoes

  • Add the chopped onion and sauté until it turns pinkish. Then, add the chopped tomatoes and cook for 3-4 minutes, stirring occasionally.

Combine Ingredients

  • Add the shredded coconut, mint leaves, and coriander leaves (if using). Cook until most of the water from the tomatoes has evaporated.

Season and Cool

  • Stir in the tamarind paste and salt to taste. Allow the mixture to cool completely.

Blend to a Coarse Paste

  • Once cool, use a blender or food processor to grind the mixture into a coarse paste. Don't over-blend; you want some texture.

Garnish and Serve

  • Garnish with fresh mint leaves and serve your delicious Andhra Tomato Mint Chutney with your favorite South Indian dishes!
