Ingredients
For the Spiced Mango Sorbet
- 2 Mangoes and cubed, peeled, ripe
- 1/2 cup Sugar granulated
- 4 Cloves whole
- 1/2 Cardamom Pods
- 1 Star Anise whole
- 2 tbsp Lemon Juice freshly squeezed
- 1 cup Water
For the Dark Chocolate Cups
- 6 ounce Chocolate dark, finely chopped, high-quality
- 12 Mini Cupcake Liners Or Molds silicone molds are recommended for easy removal

Instructions
Prepare the Mangoes
- Wash, peel, and cube 2 ripe mangoes. Place the cubed mangoes in an airtight container and freeze overnight.
Make the Spiced Sugar Syrup
- In a small saucepan, combine 1/2 cup granulated sugar, 4 whole cloves, 1/2 pod of cardamom (lightly crushed), 1 whole star anise, and 1 cup of water.
- Bring the mixture to a boil over medium heat.
- Reduce the heat to low and simmer for 10-15 minutes, or until the sugar is fully dissolved and the syrup slightly thickens.
- Remove from heat and let cool completely. Strain the syrup through a fine-mesh sieve into a bowl, discarding the spices.
Blend the Sorbet
- In a blender, combine the frozen mango cubes, 2 tablespoons of lemon juice, and the cooled spiced sugar syrup.
- Blend until you achieve a smooth puree.
- Transfer the sorbet mixture to an airtight container and freeze for at least 4 hours, or until solid.
Make the Chocolate Cups
- Finely chop 6 ounces of dark chocolate.
- Melt the chocolate using a double boiler or by microwaving in short bursts (15-second intervals), stirring until smooth. Be careful not to overheat the chocolate.
- Brush a thin layer of melted chocolate onto the inside of each mini cupcake liner or silicone mold, ensuring to cover the entire surface.
- Refrigerate the molds for 10-15 minutes to set the chocolate.

- Carefully remove the chocolate cups from the molds once fully set.
