Ingredients
Spice Blend
- 1 tsp Cumin Seeds
- 1 tsp Coriander Seeds
- 1 tsp Peppercorns black
- 1 tsp Fenugreek Seeds
- 2 Chilies adjust to taste, dried, red
Saalan Ingredients
- 1 tbsp Oil vegetable or coconut oil
- 1 tsp Mustard Seeds
- 1 tsp Fenugreek Seeds methi dana
- 10 leaves Curry Leaves
- 2 tsp Ginger-Garlic Paste
- 1 medium Onion finely chopped
- 10.5 Onions about 1 cup, roughly chopped, small
- 1 tsp Turmeric Powder haldi
- 2 tsp Tamarind Pulp
- 200 ml Water
- 1.5 tsp Salt or to taste
- 2 tbsp Peanuts for added flavor, optional, roasted
Instructions
Preparing the Spice Blend
- Dry roast cumin seeds, coriander seeds, peppercorns, and fenugreek seeds in a pan until fragrant. Grind into a fine powder using a spice grinder or mortar and pestle.
Sautéing Aromatics
- Heat oil in a pan or kadai. Add mustard seeds and allow them to splutter. Add fenugreek seeds and curry leaves. Sauté for a minute until fragrant. Add ginger-garlic paste and finely chopped onion. Sauté until the onion turns light brown.
Combining Ingredients
- Add the ground spice blend, turmeric powder, and salt. Mix well and sauté for 2-3 minutes. Stir in tamarind pulp. Add water and small onions. Bring to a simmer, cover, and cook for 10-12 minutes, or until the onions are tender.
